Description

This Chopped Italian Salad with beer vinaigrette dressing is a blend of vibrant flavors and textures sure to delight your taste buds!

Instructions

Beer Vinaigrette Dressing Instructions:

  1. Reduce the beer in a saucepan on the stove by 1/3 and chill to 70°F within .5 hour
  2. Combine all ingredients, except for the oil.
  3. Slowly emulsify the oil with immersion blender or blender and season with salt and pepper.
  4. Label and refrigerate.

Preparation of Italian Chopped Salad:

  1. In a large mixing bowl, combine the romaine lettuce, dressing, sliced grilled chicken, julienned pepperoni and salami, red bell pepper, onion, diced tomato, Pepper Jack cheese, Kalamata olives, and drained Garbanzo beans. Drizzle with the Beer Vinaigrette dressing and toss ingredients well.
  2. Top with grated Parmesan cheese. Arrange the grilled baguettes crisscrossed on the side of the salad in the bowl, facing up.
  3. Serve the salad immediately.
