- 1/4 cup of olive oil
- 1/4 cup of finely chopped fresh parsley

Instructions
Preparation:
- Begin by thoroughly washing and scrubbing the potatoes. Peeling is optional; leaving the skin on adds texture and flavor.
- Cut the potatoes into sticks approximately 1/4 inch wide and 3-4 inches long, aiming for uniform cuts for even frying.
Soaking and Drying:
- Soak the potato sticks in cold water for 15-30 minutes to remove excess starch, contributing to a crispier fry.
- After soaking, thoroughly pat the potatoes dry with paper towels to remove as much moisture as possible.
Garlic Infused Oil:
- In a small saucepan, heat the olive oil over low heat. Add the minced garlic and gently cook for 2-3 minutes, ensuring the garlic does not brown. This process will infuse the oil with garlic flavor. Set aside.
Double Frying:
- Fill a deep, heavy-bottomed pot with vegetable oil to a depth of 3 inches and heat to 325°F (160°C) for the first fry.
- Carefully fry the dried potato sticks in batches to avoid overcrowding, for about 3-4 minutes per batch, until they are just pale and slightly golden. Remove and let them drain on a paper towel-lined plate.
- Increase the oil temperature to 375°F (190°C) for the second fry. Return the fries to the hot oil and fry until golden brown and crispy, approximately 1-2 minutes.
- Again, remove the fries and drain on clean paper towels.
Tossing and Seasoning:
- Place the double-fried potatoes in a large bowl. Drizzle with the garlic-infused olive oil, ensuring the fries are evenly coated. Season with salt and black pepper and toss again.
Finishing Touches:
- Sprinkle the fries with the freshly chopped parsley. If using, add grated Parmesan cheese and toss to ensure the fries are evenly coated with the seasoning and cheese.
